Here’s a wine label of Sensi Winery produced at Fattoria di Calappiano, which follows the principles of organic farming. It is obtained from 100% Ciliegiolo which are cultivated in a hilly terrain about 150 meters asl on sandy, limestone and marl substrates with sandy shale rich in marine fossils. Fermentation takes place at a controlled temperature in stainless steel tanks for 15 days, followed by 20 days of maceration at 28°C. Ageing takes place in steel tanks as for about 6 months on fine lees with micro-oxygenation then 3 months in the bottle.
In the glass, it displays a vibrant ruby red in color with a complex nose of blueberries, dark cherries, sweet spices and floral hints. In the palate, it is crisp with a lovely acidity lingers until the end and, ripe red fruits and dried tea leaves, and integrated tannins.
