Chef Gregor Rozman, a member of the Slovenian culinary team, takes you on an inspiring culinary journey of the integration of tradition and modern trends attained by techniques and creativity. The quality of the raw materials is foremost in the chef’s agenda as he explains each dish he presents. At the hotel, working with local suppliers and farmers is paramount for the chef to provide the best and freshest produce that the season and territory can give. Dishes are created with modern techniques but with special focus on home cooking made from local ingredients. Familiar flavors of tradition remain but revisited in such a way that asserts more interesting flavors, interweaving international culinary influences with traditional Slovenian.
