This year’s Christmas and New Year holiday season at Rome Cavalieri Waldorf Astoria Hotel will be as fascinating and richer as it was in the past seasons. Tinsels, garlands, stars, snowflakes, ribbons, candles, swags, balls and all things that shimmer in gold contrasted with black, pearl and teal will be decorated in abundance around the hotel to give a joyous festive mood. Inspired by the roaring years of the past century, it expresses the desire to return to the glamorous days after a difficult period we went through and to go back to the pleasures of life. There are many gastronomic proposals for the gourmet lovers at the restaurants of the hotel. Executive Chef Fabio Boschero of Uliveto Restaurant and Chef Heinz Beck of triple Michelin starred restaurant La Pergola are preparing menus that offer an abundance of holiday inspired dishes signed with their well-known originality. In tune with the holidays, Executive Pastry Chef Dario Nuti is preparing exquisite cakes and desserts while at the Tiepolo Bar, Angelo Severini will be preparing his famous mixology experiments. In addition, rooms and suites will have the special rate in the holiday period starting from €275 per night.
Christmas Eve Dinner, 24th of December:
La Pergola Restaurant by Chef Heinz Beck from 19:30 to 23:30 at €490 per person. The dinner is composed of eight courses created specially for the night by the triple Michelin starred chef and his team. Crustaceans, amberjack, lobster, scallop, aubergines, black truffles, turbot and a variation of chocolates will be the protagonists in the plates while they will be paired with a fine selection of prestigious labels from the restaurant’s renowned wine cellar, a winner of Wine Spectator’s Grand Award.
Uliveto Restaurant by Chef Fabio Boschero from 19:00 to 23:00 at €98 per person. There will be a rich menu of five seafood appetizers, tortellini di magro in broth, single-origin kamut spaghetti with clams, a main course between fish and veal and desserts like the Christmas yule log cake with orange, Bronte pistachios and Madagascar vanilla by Pastry Chef Dario Nuti. The dinner will also be served with wines selected by the sommelier.
Christmas Day, 25th of December:
La Pergola Restaurant by Chef Heinz Beck from 19:30 to 23:30 at €490 per person. Another 8-course dinner with the renowned chef’s celebrated kitchen starting with Duck Foie Gras with Apple and Cinnamon followed by a succession of dishes with lobster, John Dory, scampo, smoked capon, capon tortellini, lamb and a special Christmas dessert. A selection of wines with important labels will be accompanying the dishes.
Uliveto Restaurant by Chef Fabio Boschero from 13:00 to 16:00 at €175 per person (€80 per child). A Christmas celebration with the whole family in the most authentic culinary tradition rediscovering the flavors of Italy from fried vegetables and DOP salami, to cappelletti and ravioli, to end with sweet Christmas delicacies of Pastry Chef Dario Nuti. At the Sala Ellisse, the children will be entertained with the arrival of Santa Claus on his sleigh carrying gifts for the children.
Tiepolo Lounge: 24th, 25th and 26th of December:
Tiepolo Lounge, 16:00 to 19:00 at €38 per person. A cheerful afternoon with a rich buffet of Christmas sweets by Pastry Chef Dario Nuti accompanied by a flute of champagne, Veuve Clicquot Rosè.
Tiepolo Lounge, 19:00 to 21:30 at €20 per person. Continue the evening with tasty cocktails created by the lounge’s mixologists: Gold Rush and Brilliant Champagne.
Cavalieri Grand Spa Club: 24th and 25th of December:
Cavalieri Grand Spa Club, 50-minute Treatment at €155 per person. Christmas is not just about eating all the holiday goodies. New Year’s Eve Grand Gala, 31st of December:
La Pergola Restaurant by Chef Heinz Beck at €1300 per person. Saying goodbye to the year 2021 will be a memorable celebration at La Pergola with music and spectacular fireworks after an ample dinner of oysters, shrimp, parsnip tortelli, turbot, duck foie gras, venison, amberjack, black truffles and a special New Year’s Eve dessert. Dinner will be accompanied by a selection of fine wines from the award-winning wine cellar of the restaurant.
Salone dei Cavalieri Grand Ballroom by Chef Fabio Boschero, from 20:00 at €370 per person. An unforgettable New Year’s Eve with dazzling performances, singing and entertainment for everyone which starts at 20:00 and will continue after midnight. The night will start with bubbles and canapès, followed by a grand buffet of starters, first course dishes of tagliolini with caviar and risotto with Grana Padano aged 36 months, main course of veal tournedos and a grand buffet of desserts by Pastry Chef Dario Nuti. At midnight, the traditional lentils and cotechino will be served.
Terrazza Degli Aranci, from 22:00 at €190 per person. From the terrace with a view while watching the fireworks, a grand buffet of dessert will be set plus Moet & Chandon champagne.
New Year’s Day, 1st of January:
Garden Lobby by Chef Fabio Boschero from 13:00 to 16:00 at €155 per person (€70 per child). A toast to the New Year in traditional Italian style accompanied by live music. At the Sala Ellisse, the children will have entertainment, games and music.
